Pork ragout with apples

Delicious, sweet & sour ragout with apples and turnips. Unusual but very yummy combination.

Preparation time 40 minutes .. Cooking 85 minutes

INGREDIENTS .. 8 pers

  • 800-900 g porkmeat, in cubes
  • 2 onion, in pieces
  • 3 turnips, in cubes
  • 6 carrots, sliced
  • 4 apples, quartered
  • 2 tbsp apple vinegar
  • 3 tbsp brown sugar
  • 500 ml chicken broth
  • 2-3 little toasts
  • salt & pepper

PREPARATION

Brown and season the meat with salt and pepper and bake together with onion in a large pot. Add the chicken broth and brown sugar and simmer 25 minutes. Add apples, turnips and carrot and the toast bread slices and simmer over low heat for about 1 hour.

For the gluten-free version: substitute the toast bread by 3 tbsp of gluten-free binder (cornstarch, or other)
