The most easy way how to prepare a fish.
Preparation time 20 minutes
INGREDIENTS .. 2 pers
- 400 g pod
- 500 g little potatoes
- 4-6 carrots
- 1 big onion
- chives
- salt & pepper
SAUCE BEURRE BLANC
- 1 chopped shallot
- 1 tbsp + 200 g butter
- 200 ml fish broth
- few drops of lemon juice
- salt & pepper
PREPARATION
Steam the little potatoes till ready.
In meanwhile, poach the cod along with the carots and a large onion till ready (8 minutes).
SAUCE BEURRE BLANC
Fry the chopped shallot in butter until it is translucent. Moisten with white wine and fish stock. Let this basis for white butter sauce reduce until a syrupy mass. Remove the sauce from the heat and add some lemon juice.
Pour the white butter sauce in a jar and add an extra lump of butter. Mix and add the white butter sauce through a sieve. Season if necessary with salt and pepper.
Serve the fish on hot plates with the potatoes, carrots and butter sauce. Sprinkle with chopped chives for garnish.
