Pecan bread

Fantastic taste, magnificent structure, fluffy soft bread.

Preparation time 20 minutes .. Rising 60 + 40 minutes .. Baking 40-45 minutes

INGREDIENTS

  • 11 oz (300 g) bread flour
  • 11 oz (300 g) durum wheat
  • 1 medium-sized boiled and crushed potato
  • 1/2 tsp cumin
  • 1/2 tsp sugar
  • 3/4 oz (21 g) fresh yeast
  • 0,9 cup (250 ml) lukewarm water or milk
  • 2 tsp salt
  • a handful of coarsely chopped pecans
  • 1 tbsp honey

PREPARATION

Sift flour into a bowl and mix with salt and cumin. Add grated potato, sugar, yeast and lukewarm water and make a soft, semi-solid dough. Leave it covered to rise in a warm place for one hour.

After rising mix the dough again, roll and sprinkle with chopped pecans. Then stow, put in with a butter greased baking mold and let rise in a warm place covered with a plastic towel further for 40 minutes. Bake the bread 40-45 minutes at 93,3°F, till red. Brush the bread after taking out of the oven with cold water and put on the rack and let cool down.

Cooled and sliced ​​bread you can easily freeze.
