Quick, cold and delicious main course salad, perfectly suitable for hot days.
Preparation time 25 minutes
INGREDIENTS .. 6 pers
- 300 g Farfale pasta
- 400 g salmon (can be from the tin)
- 300 g fresh spinach
- 150 ml whipped cream
- 1 tbsp balsamic vinegar or cream
- 150 g carrot in thin rings
- 150 g peas (may be frozen too)
- juice of 1/2 lemon
- salt & pepper
PREPARATION
Cook the pasta in salted water for 5 minutes. After 5 minutes, add the peas and carrots in rings and cook for 5 more minutes. Drain and let cool down completely.
While the pasta is cooking, prepare salmon. You can also use the salmon from the tin, but freshly baked is more tender and tasty 😉
Season the salmon to taste with salt and pepper and bake in the hot pan on butter for 4 minutes each side. Allow to cool and cut into flakes.
Also remove the stalks from the spinach and cut the leaves into strips.
When the pasta is cold, add the salmon and the spinach and mix well.
Prepare the dressing: whisk the cream semi-solid and add the balsamic vinegar and add cream. Mix well and season to taste with salt and pepper. Mix the dressing under pasta and done.
Serve the pasta with a few drops of lemon juice gesprankeld. Delicious with a glass of brut cider or cold beer.
