Parsley pesto with pistachios

Delicious pesto full of antioxidants. Perfectly suitable not only for fish, but also for toasts or bruchetta’s.

Preparation time 7 minutes


  • 65 g pistachios
  • 30 g parsley
  • 100 g spicy, shredded cheese
  • 9 tbsp olive oil
  • 2 tbsp of lemon juice
  • salt & pepper


Toast the pistachios in a dry frying pan briefly. Put the parsley, pistachios, lemon juice, cheese and the oil in a blender, food processor or mortar and mix until thick pesto. Season to taste with salt and pepper.

Use as a flavouring for fish, toasts or bruchetta.
