For Christmas we bought a 3 kilo turkey for not even 12 EUR. And believe it or not, we had made off 11 beautiful portions which we processed in three different meals. This hachis parmentier is the third of them. This is what I call “the perfect price for food” 😉
Preparation time 40 minutes .. Baking 20-30 minutes
INGREDIENTS .. 4-6 pers
- leftovers from Christmas turkey
- 2 cloves garlic
- 300 g fresh spinach
- 1 kg potatoes
- 200 g sour cream
- 150 g grated Pecorino
- freshly grated nutmeg
- salt & pepper
PREPARATION
Boil the potatoes until tender. Process them afterwards with sour cream, nutmeg, salt and pepper puree. Leave to cool.
Preheat the oven to 180°C.
Heat olive oil in a pan and fry 2 cloves of garlic in it until golden. Remove the cloves and stir in quickly the spinach.
Butter the pan and put a layer of mashed potato. Put a layer of grated pecorino cheese and spinach, followed with layer of potatoes.
Put the pan in the center of the oven and bake for 20-30 minutes parmentier. You can it possibly under the gril gratin until it gets a golden brown layer.
You can replace the remnants of turkey just as well by a mixed, chopped meat.
