Unforgettable potato soup balls from my grandmother. They are delicious in lentil or bean soup with carrots, kohlrabi and parsley root.
Preparation time 15 minutes
- 1 grated potato
- 1 egg
- finely chopped parsley
- finely chopped spring onion
- 3-4 tbsp allpurpouse flour
- crushed clove of garlic
- salt & pepper
Mix all ingredients together in a bowl. The dough may not run or be too thick. Add salt en pepper and mix again.
When the soup starts to boil, take from the dough with a teaspoon and put the balls into boiling soup. When all balls are in the soup, boil the soup further for 5 more minutes and take of the fire.
While boiling in the soup, the balls will grow and get thicker, but that’s normal.
