Typical and indispensable X-mass classic and the most beloved cake of my brother.
Preparation time 15 minutes .. Baking 18-20 minutes
THE WALNUT DOUGH
- 1 1/2 cup durum wheat flour
- 1 1/3 cup chopped walnuts
- 1 cup + 1 tbsp margarine
- 2 2/3 cup powder sugar
- 6 egg whites
THE GLAZE
- 6 yolks
- 1 1/2 cup powder sugar
- 1 tbsp vanilla sugar
- 1 tsp lemon sap
PREPARATION
Mix the fat and sugar until foamy. Whisk egg whites until stiff. Add the flour to the yolk foam add the sugar and ground nuts and slowly mix the whites. Pour the dough on a greased baking sheet sprinkled with flour and bake in a preheated oven at 356°F for about 18-20 minutes. While the cake bakes, prepare the glaze.
GLAZE
Mix the egg yolks with the sifted powdered sugar and vanilla sugar. Mix the well and pour over the still hot cake. Spread the glaze over the cake quickly and softly as it dries very fast.
Cutting cake is easier with an very finely serrated knife. Then just simply cut very carefully, because glaze cracks easily under the least pressure.
