Courgette Ring with feta

For zucchini and feta cheese lovers in any possible way.

Preparation time 20 minutes .. Baking 45 minutes


  • 2 courgettes
  • 400 g feta cheese
  • 3 eggs
  • 4 basil sprigs
  • 200 g smoked bacon, in strips
  • 20 g butter
  • pepper & salt


Rinse the basil sprigs, pat dry, and remove the leaves off. Chop half the leaves finely and keep the rest aside.

Cut the feta into small cubes (you can use also 100 g feta cheese 300 g quark).

Wash the zucchini, pat dry and grate (a little bit coarse). Put the grated zucchini in the bowl with diced feta, bacon strips and chopped basil. Add the eggs and bringing to taste with salt and pepper. Mix well.

Preheat the oven to 210°C (convection ovens -10°C). Take the form and butter them. Pour the filling into the zucchini buttered mould and cook for about 45 minutes. Prick the ring with a knife: nothing remains to stick, it is ready.

Unmould the ring and sprinkle with remaining basil. Serve warm or cold on.

If you dish it as an appetizer want, then pour the zucchini preparation in a silicone muffin baking sheet and bake as muffins – about 30 minutes


For the vegetarian do not use any meat or bacon.
