I think personally that the second day of Christmas deserve to have it’s own special recipe. Those of us has such one: a delightful-marinated pork tenderloin with fabulous sauce.
Preparation time 6 hours 20 minutes (with marinade) .. Baking 20 minutes
INGREDIENTS .. 4 pers
- 450 g pork tenderloin
- 4 cloves garlic
- 2 tbsp mustard
- 3 lemons
- 2 springs rozemarijn
- 100 ml + 4 tbsp olive oil
- salt & pepper
PREPARATION
First make the marinade. To prepare you the cloves of garlic cut into pieces and lemon squeeze. Also, keep the peel of the lemon. Mix the lemon juice, zest, garlic and mustard. Slowly add the olive oil while you mix it with a fork.
Put the pork and rosemary sprigs in a resealable plastic bag. Put the marinade in the bag and add some pepper. Make sure the pork is covered with the marinade and squeeze the air out of the bag . Let marinate in the fridge for at least 6 hours. If the meat is marinated, you can make it out of the fridge. Additionally, you can already the preheat oven to 220°C.
Sprinkle some salt and pepper on the pork tenderloin. Heat also 4 tablespoons olive oil in a pan. Fry all sides of the pork until golden brown. Put the meat in the oven and let it bake for about 20 minutes.

Remove the pork from the oven and let the meat cool for 10 minutes with aluminium foil. You can cut the meat so easily.
TIP
Prepare the marinade in the morning or a day before use. So you’ll save time in the preparation of the dish.
