Great idea for a light lunch.
Preparation time 15 minutes
INGREDIENTS .. 4 pers
- 750 g chicory
- 1/2 cucumber
- 100 g carrot, in matches
- 50 g fennel, in matches
- 1 tomato concassé (peeled and diced tomato)
- 4 tbsp olive mayonnaise
- juice of 1/2 lemon
- freshly ground pepper
- a pinch of salt
PREPARATION
Cut chicory fine. Cut the fennel and carrot into matchsticks. Cucumber cut in half, remove the seeds and cut in matchsticks. Mix all ingredients softly among themselves.
Serve this chicory salad very fresh.
