Chesnut soup with champignons

Another version of chestnut soup. And immediate and very pleasant surprise.

Preparation time 55 minutes

INGREDIENTS .. 6 pers

  • 2 onions, coarsely chopped
  • 400 g cooked chestnuts
  • 500 g champignons
  • olive oil
  • 8 cups chicken broth
  • salt & pepper
  • curly parsley, finely chopped

PREPARATION

Heat the oil in a large pot and fry the onions and half of the mushrooms: extinguish with the broth
add the chestnuts and season with pepper en salt and let the soup simmer for ½ hour. Cut the other half of the mushrooms into thin slices and fry in butter over high heat, season with salt and pepper
Mix the soup, add the fried mushrooms and ready.

Serve decorated with sliced ​​mushrooms and chopped curly parsley.
