The recipe is sufficient for 3 lovely breads, but feel free devide the dough according your wish. The bread is really so tasteful that it doesn’t need garnish.
Preparation time 2 days .. Rising 45-60 + 45 minutes .. Baking 30 minutes
INGREDIENTS – DAY 1
- 240 g wheat sourdough →
- 350 ml lukewarm water
- 200 g durum wheat flour
- 200 g wheat flour
INGREDIENTS – DAY 2
- 15 g salt
- 125 grated cheese (Emmental)
- 100 g roasted sesame seeds
- ca.400 g wheat flour
- olive oil for rising
PREPARATION – DAY 1.
Mix all ingredients together thoroughly and leave to rest for about 12 hours in a cool place arise.
PREPARATION – DAY 2.
Place the dough on time at room temperature, so it is not cold. Add the salt, cheese, sesame seeds and flour. The drier the cheese, the less flour you need. Mix thoroughly, place in a greased bowl and cover with plastic cling film. Let the dough rise until it has become twice as large (approximately 1,5 hour).
Transfer the dough gently on the surface and divide it into 1 of 3 parts (as you wish). Shape the pieces gently into round loaves. Place in with a butter greased baking tray and let the bread rise for next about 45 minutes.
Preheat the oven to 446°F. Put the bread in the oven and let cool to 410°F. Bake about 30 minutes and cool on the rack.
