Cauliflower pancakes

Delicious, raw and absolutely gluten free. Fantastic not only for vegetarians.

Preparation time 10 minutes .. Baking 30 minutes

INGREDIENTS .. 4 pers

  • 1/2 cauliflower, raw and finely chopped
  • 3 potatoes, raw and grated
  • 2 spring onions, finely chopped
  • 3 cloves garlic, crushed
  • 2 eggs
  • oil for frying
  • salt & pepper

CUCUMBER SALSA ..

  • a piece of cucumber, deseeded and grated
  • 1 clove garlic, crushed
  • 3 tbsp sour cream
  • salt

PREPARATION

Wash the cauliflower and divide it in half. Divide half the florets, put them in a food processor and chop until “cauliflower rice” – fine crumbs. Also grate the potatoes in, press the garlic cloves and add the eggs, chopped spring onion, salt and pepper. Mix well until a homogeneous mash.

Heat the pan a little oil (peanut or sunflower oil) and form cauliflower mash 4 pancakes on the pan. Bake on both sides and continue so on until the entire mash is turned into pancakes.

Mix for the salsa all remaining ingredients together and season with some salt.

Serve the pancakes with salsa and glass of white wine or beer.
