Cabbage salad with fennel and cucumber

Fantastic, fresh, cheap and healthy salad with surpisingly tasty combination of white cabbage, fennel and cucumber.

Preparation time 10 minutes

INGREDIENTS .. 4-6 pers

  • 1/2 white cabbage
  • 1 fennel
  • 1 cucumber
  • 1 hand full of chives
  • 3 tbsp sour cream
  • 4 tbsp elder flower syrop
  • 4 tbsp cider vinegar
  • salt & pepper


Remove from white cabbage the top leaves and remove the heart (which is too hard to be eaten). Cut the cabbage on a mandolin or in the kitchen robot until the slices are fine. Now do the same with the fennel. Peel the cucumber and cut it on a mandolin or kitchen robot in good slices. Finally cut the chives into small pieces and mix it all together into a larger bowl. Season the vegetables with pepper and salt.

Mix in a small bowl the sour cream, cider vinegar and elder flower syrup into an vinegar.
Pour vinegar over the vegetables and mix well together. Ready.

Serve your lettuce with brown sandwiches, wasa or baguette and glass cider.
