Breakfast lecho

Delicious summer breakfast you’ll love as well. This is typical breakfast in Slovakia as well as many other East-European countries.

Preparation 15 minutes

INGREDIENTS .. 4 pers

FOR FRESH LECHO

  • 1 onion, finely chopped
  • 2 long, sliced, thin green peppers
  • 3 big tomatoes, in dices
  • oil
  • salt

PREPARATION WITH PICKLED LECHO

Put the contents of the jar into the pan and bring to the boil. When lecho starts to boil add the eggs and stir constantly as scrambled eggs until it will be ready. Season with salt and serve immediately with fresh bread or bread rolls.

PREPARATION WITH FRESH VEGETABLES

Clean the onions and cut them finely. Wash the peppers, remove the seeds from the inside (they have a bitter taste) and cut into small slices. Clean the tomatoes and you can peel them if desired (optional). Also cut tomatoes into small pieces. Fry the onions in a large deep pan until glassy. Now add the pepper slices and cook until slightly firm (about 20 minutes). Taste with salt, add tomatoes and boil all together for a further 20 minutes (until the tomatoes are soft too). Finally add the eggs and cook until they will be ready. Season with salt if necessary and serve immediately with fresh bread or bread rolls.
