Blanquette of salmon

Delicious salmon à la minute with fried potatoes, which can not but be yummy.

Preparation time 30 minutes

INGREDIENTS .. 4 pers

  • 4 x 200 g salmon steaks
  • 300 ml fish stock
  • 300 ml cream
  • 30 g butter
  • 20 g flour
  • 1 egg yolk
  • 3 spring onions
  • salt & pepper

PREPARATION

Cut the salmon into large square pieces. Bring the fish stock to the boil in a saucepan and add the pieces of salmon. Allow 15 minutes yarn.

Melt the butter in a saucepan and add the flour. Make a roux and add 1 tablespoon of fish stock. Stay strong beat to clump counter. Let the sauce thicken. Pour the cream and season with pepper and very little salt. Remove from heat, add the egg yolk and beat on. Pour this sauce in salmon cooking, cook for 5 minutes over a very low heat without letting it boil.

Clean the spring onions and cut into pieces. Sprinkle the Blanquette of salmon with it. Season with pepper and serve hot.
