Bessie ®

My little Bessie. Name came from the Dutch “aalbessen”, which here in Belgium means currant bush.

Preparation time 20 minutes .. Baking 20 + 15 minutes

INGREDIENTS .. 6 pers

  • 1,25 kg currant bush
  • 250 g butter
  • 200 g + 6 tbsp sugar
  • 2 bags vanilla sugar
  • pinch of salt
  • 4 eggs
  • 250 g flour
  • 75 g pudding powder
  • 1 tsp baking powder
  • icing sugar

PREPARATION

Preheat the oven to 200°C. Grease a baking pan (ca.32×39 cm, 3,5 cm deep) and dust it lightly with flour. Wash the fruit, drain and zipper of the sprigs.

Beat the butter with 200g sugar and vanilla sugar and a pinch of salt. Beat in the eggs one by one. Mix the flour, cornstarch and baking powder and stir it through portionwise. Spread the dough into the pan. Spread the berries over it.

Bake roughly 20 minutes in a preheated oven. Sprinkle with 4 tablespoons sugar and bake for about 15 minutes at the same temperature. Allow to cool.

Serve sprinkled with fresh berries and icing sugar.
