Classic scrambled eggs, enriched with iron-rich mint. This delicacy full of iron is really good for “constantly tired children” (who suffer from anemia), but even after “women’s days” you will get energy from this breakfast. My grandmother “has used it to charge my batteries all my childhood” 🙂 I also do it with fresh, young nettle and both have been my Flemish husband’s favorite breakfast for years.
Preparation time 10 minutes
INGREDIENTS .. 1 pers
- 3 eggs
- 30 g butter
- 2 spring onions, finely chopped
- handful of chopped mint
- salt
PREPARATION
Heat the butter and fry the onion until it is glassy. Add the mint and cook together for a minute. Then add the eggs and salt and stir to get the non-dry scrambled eggs.
Serve with fresh bread or baguette.
