Traditional Slovak potato salad for Christmas dinner. Only to make it lighter and easier to digest I’m using olive mayonnaise, green apple and sour cream.
Preparation time 60 minutes ..
INGREDIENTS .. 6-8 pers
- 2 pounds boiled potatoes
- 6 cups sterilized peas & carrots
- 1 1/2 cup olive mayonnaise
- 4 hard boiled eggs
- 4-5 medium sweet-sour cucumbers
- 3 tbsp Dijon mustard
- 2 medium onions, finely chopped
- 3/4 cup culinary cream
- 3/4 cup sour cream
- 1 Granny Smith apple
- salt & pepper
PREPARATION
Peel the boiled potatoes and hard-boiled eggs and cut them in a bowl using typical Slovak tool for this – the rackgrater (see the picture). Cut the onions and sterilised cucumbers finely and add to the potatoes. Drain the peas and sterilised carrots. Cut the carrots finely and add the peas in the bowl. Mix together well.
Add the sour cream, mustard and olive mayonnaise in the salad and mix well. Add the salt and pepper and mix well. Finally add grated a peeled green apple over the salad and mix together well. If still a bit dry, add the culinary cream and mix well together.
