Originally I wanted to prepare a cauliflower gratin, but in my fridge I also found the puff pastry so I decided to make a quiche. Quiche is really perfect dish to make from the rests of the weekend in your fridge.
Preparation time 25 minutes .. Baking 35-40 minutes
INGREDIENTS .. 4-6 pers
- 1 cauliflower
- 1 sheet of puff pastry
- 150 ml milk
- 150 ml whipped cream
- 3 eggs
- 3 thick tbsp soft cheese
- 150 g canned tuna
- nutmeg
- iceberg lettuce
- salt & pepper
VINAIGRETTE ..
- 2 tbsp white wine vinegar
- 4 tbsp olive oil
- 1 onion
- salt & pepper
PREPARATION
Preheat the oven to 195°C.
Bake the pastry for 15 to 20 minutes blind in a preheated oven at 195°C.
Clean the cauliflower, cut into florets, steam and let cool. Mix the milk with the cream and the eggs and season with salt, pepper and nutmeg.
Sieve the tuna and divide in small pieces.
Spread the cheese at the bottom of the puff pastry. Put the cauliflower, pieces of tuna and the egg mixture and cook for 35-40 minutes in the oven.
For the vinaigrette: Chop the onion finely, lettuce in smaler pieces and mix with the other ingredients.
Serve the quiche with lettuce and vinaigrette.
