Cauliflower Casserole

Light dish from a “desperate housewife”.

Preparation time 45 minutes .. Baking 26 minutes

INGREDIENTS .. 4 pers

  • 1 bigger cauliflower
  • 100 g bacon, in cubes
  • 150-200 g cooked rice
  • 200 ml sour cream
  • 200 g grated, savory cheese
  • 2 spring onions, in rings
  • 1 tbsp curcuma
  • salt & pepper
  • 1/4 bunch of chive, finely chopped

PREPARATION

Wash the cauliflower, divide in parts and boil in the softly salted water until soft.

Bake the bacon in the pan and set aside. Grease the baking dish with oil.

In a larger bowl mix together cooked rice (I had some remains from last meal), sour cream, onion and half of the cheese. Season with curcuma, salt and black pepper. Stir in the roasted bacon and cauliflower parts and gently stir together.

Cool the oven to 370°F. Put the cauliflower mixture in the baking dish and place it in the heated oven for 20 minutes on the top reck in the oven. Bake about 20 minutes, then remove from the oven, sprinkle it with the other half of the cheese and put it back in the oven for 5-10 more minutes.

After baking the food from the oven, pick and sprinkle with a chopped chive. Serve with a cooled white wine or beer.
