Bolognese Baguettes

Amazing tasty sandwiches for your picknick, camping or if you need to travel quite a distance.

Preparation time 15 minutes .. Rising 60 + 30 minutes .. Baking 15-18 minutes

INGREDIENTS .. 20-25 pcs

  • 800 g bread flour
  • 200 g rye flour
  • 6 tsp linseed
  • 5-6 tsp sunflower seed
  • 1 tsp cumin
  • 1 tsp vinegar
  • 3 tsp salt
  • 100 ml of oil
  • 300 ml water
  • 300 ml of milk
  • 1 tsp sugar
  • 40 g fresh yeast (or 20 g dried)
  • 1 beaten egg
  • coarse salt

BOLOGNESE FILLING

  • 200 g pepper salami
  • 3 tbsp finely chopped rosemary
  • 2 minced cloves garlic
  • 80 g ketchup, or tomato puree
  • 150 g grated Gruyere cheese
  • 3 tbsp oregano

PREPARATION

Prepare the dough for the ingredients and allow him to rise for an hour.

Meanwhile prepare the filling: cut the salami fine (see photo) and mix with the remaining ingredients.

Knead the dough after raising and cut pieces of 80 grams (or as you wish). Roll each peace of dough flat, fill them with the Bolognese filling and roll them up.

You can also combine the flour with some rye or whole grain.

If you do not want to make the sandwiches, braid each piece of dough and braid them.

Preheat the oven to 200°C.
Leave the rolls for 30 minutes after filling. Sprinkle the baguettes with beaten egg or milk and bake at 200°C for about 15-18 minutes.

After sprinkling with egg, I sprinkled with oregano and coarse salt (optional).

After baking and cooling, it is also very suitable to freeze for later.
