Original combination of fresh figs, caramelised red onions, blue cheese and almonds. This recipe I’d like to dedicate to the fantastic vegetarian blogger SueClash.

INGREDIENTS .. 2 pers
- 3 fresh figs
- 2 red onions
- 4 tbsp cane sugar
- 20 g blue cheese
- 3 tsp almond strips
- 30 g butter
- 1 tsp olive oil
PREPARATION
Prepare pizza dough according to the recipe in the link (if you do not have time, use ready-made dough from the store). If you do it at home, roll the dough after rising to a thickness of 3 mm and place it on a baking tray inlaid with parchment paper.
Wash the onions and cut into thick strips. Heat the butter in a pan with olive oil and when it begins to foam, add the onion to the pan. Fry the onions until translucent, sprinkle with sugar and caramelise them.
Preheat the oven to 210°C. Wash the figs and cut into eighths. Divide the caramelised onions evenly over the dough, cover with prepared figs, and sprinkle with chunks of blue cheese, almond strips and bake for 15 minutes.
After baking, sprinkle the pizza with mint leaves and serve with cider, a glass of red wine, or cherry beer.
