Bread with a subtle, full flavor.
Preparation time 20 minutes .. Rising 3 + 1 hour .. Baking 30-40 minutes
INGREDIENTS .. for 2 breads
- 2,1 cup lukewarm water
- 3 1/3 cup wheat sourdough
- 3 1/3 cup wheat flour
- 1 3/4 cup spelt flour, sieved
- 1 3/4 cup fine rye flour
- 2 tbsp salt
- 2 cups whole hazelnuts
- olive oil for rising
PREPARATION
Mix all ingredients except salt and nuts. Knead the dough thoroughly.
Then add the salt and the nuts and knead it into the dough.
Put the dough in an oiled plastic bowl and let it rise for 3 hours.
Knead the dough and divide into 2 pieces-if you want two loaves. Form there loaves. Place on a with butter greased baking tray. Let the loaves for about 1 hour.
Preheat the oven to 518°F. Put the loaves in the oven and let cool to 446°F. Bake the breads 30-40 minutes.
