INGREDIENTS .. 3 liters of syrup
- 30 flower bunches of the elder
- 2 liters boiled or filtered water
- 2 kg sugar
- 20 g of citric acid (1 bag Dr.Oetker)
Was the fragrant creamy white flower clusters in cold water and put them in a pot with water and citric acid. You can add some not treated lemon as well. Let infuse for 24 hours. Then strain the liquid through a muslin, stir in the sugar and bring to the boil. Solve all the sugar and continue to cook until the syrup thickens. Pour the syrup then into sterilized bottles, close them well and let cool.
To make the syrup I mostly use raw cane sugar because white sugar sticks to the intestines while raw sugar is easily degradable in the body. Only the color is darker with raw sugar. But it’s not that big of an issue.
Once the bottle is open keep it in the refrigerator. It’s perfect for several months.
