Stuffed zucchini

If I would have to describe this recipe I’d do it best with this Slovak proverb: “A virtue out of necessity.” Sometimes I’m really desperate when it comes to everyday cooking and this was a nice way to combine vegetables with not too much of meat.

Preparation time 10 minutes .. Baking 60 minutes

INGREDIENTS .. 4 pers

  • 2 smaller zucchini
  • 450 g minced meat
  • 1 onion, shredded
  • 2 tomatoes, peeled and diced
  • 1 egg
  • 2 cloves garlic, crushed
  • 3 tbsp bread crumbs
  • 1 tsp cumin
  • grated cheese
  • salt & pepper
  • olive oil

PREPARATION

Preheat the oven to 160°C.

Cut the zucchini lengthwise in two, remove the flesh, but not trough away but cut into small cubes. Crush the garlic. Mix the meat with the onion, the pulp, diced tomatoes, egg, bread crumbs and garlic. Season with salt, pepper and cumin.

The recipe is written for 4 people, yet I have used only half of the ingredients because I found it a bit too much for two people. But still I had enough meat to fill even three separate tomatoes – delicious!

Fill the zucchini with this mixture and sprinkle with the cheese and olive oil. Put them for one hour in an oven at 160°C.

The raw zucchini stuffed with meat must be done at a lower temperature, otherwise the meat will be cooked while the courgettes will still be mourning. And that is certainly not the effect we wish 😉

Serve with glass of beer or white wine and enjoy! The meal is yummy, juicy and nutricious !
