Rye bread with walnuts

Dark bread with walnuts as a remedy for liver problems. Due to the fact that dark kinds of flour contain less sugar is rye bread perfectly suitable for sugar and liver diet.

Preparation time 15 minutes .. Resting time 15 minutes .. Rising 2 x 1 hour .. Baking 30 minutes

INGREDIENTS .. 950 g bread

  • 350 g rye flour
  • 150 g wheat flour
  • 100 g fresh sour dough
  • 2 g fresh yeast
  • 10 g salt
  • 2 tbsp sour cream
  • 340 g cold water (20°C)
  • handful of walnuts

PREPARATION

Mix the flour with the salt. Add the sour cream, liquid sour dough and fresh yeast dissolved in little water. Add water and knead. The dough should feel some wet.

Cover with a damp cloth and let rise for an hour. After an hour, knead the dough a little, make 3 balls and let them rest about 15 minutes. After 15 minutes, add chopped nuts at each ball and make from each piece an oblong loaf. Put the bread on a baking sheet lined with parchment paper, sprinkle with rye flour and cut into a shape of herringbone, but leave between the incisions a piece of dough, thick as a thumb free.

Let the loaves rise for another hour.

Meanwhile, preheat the oven to 225°C. Place a roasting pan under the grill in the oven, add 50 ml of water and put the bread in the oven. Bake for 30-35 minutes.

Allow the bread after baking on a rack.

Tastes delicious with fresh butter or cheese.
