Potatoe-salmon salad

Fantastic, fresh salad that you can eat as a main course as well as a side dish.

Preparation time 1 hour and 15 minutes

INGREDIENTS .. 6-8 pers

  • 2 kg waxy potatoes
  • 6-8 eggs
  • 5 tbsp white wine vinegar
  • 1/2 cube vegetable stock
  • 1 big onion, chopped
  • 300 ml plain yoghurt
  • 150 ml double cream
  • 3-4 tbsp horseradish
  • 1-2 tbsp capers
  • 300-400 g slices of smoked salmon
  • 1 bunch chives
  • salt & pepper

PREPARATION

Boil the eggs. Wash potatoes and boil them in peel about 20 minutes. Let the potatoes and the eggs under cold, running water. Peel the eggs. Cut the potatoes into slices. Take 250 ml of water with vinegar and broth to a boil. Peel e chop the onion. Add the onion to the broth and cook it gently 1-2 minutes. Season to taste with salt and pepper. Pour the still hot over the potatoes and leave about 15 minutes pulling. I had potatoes so I used the broth over the boiled potatoes cast.

Mix the yogurt with the cream, horseradish and a little salt. Fold in the capers. Cut the salmon slices and eggs into small pieces and fold them gently with the potatoes. Mix the yogurt mixture into the salad, add the chopped chives and mix everything well. Allow the salad to use pull least 2 hours.

Serve with cold white wine.
