Daniel’s legume salad

My most preferred salad during 21-days fasting period of Daniel.

Preparation time 90 minutes .. Durability 5 days

INGREDIENTS .. only for me 😉

  • 3-4 hands full of small green lentils
  • 3-4 hands full of kidney beans or black beans
  • 1 1 small can of corn
  • 125 g of rice
  • 2 cloves of garlic, pressed
  • handful of chopped parsley
  • 6-7 Tbsp sunflower oil
  • salt & pepper

PREPARATION

Cook the lentils with a bay leaf and strainer, but keep the cooking liquid. Put the lentils in a larger bowl.
Also cook the beans, sift them like lentils and now mix the cooking liquid and the sieved beans in the bowl with lentils.

Boil the rice in the cooking liquid, strain and mix together with legumes in the bowl.

Add the crushed garlic, chopped parsley and corn, add the oil and mix well.
Season with salt and pepper, but gently, because you are fasting 😉

Replace the legumes during fasting with chickpeas, cooked mushrooms, carrot or spinach and the rice with boiled wheat.

If you are not fasting you can eat it with a poultry or pork tenderloin a la minute.
