Aalst flan

Traditional, Flemish regional product, typical of Aalst city and region. Flans are actually traditional Belgian wander cake Nr.1. No city fair, carousel or event in the region can happen without them. They taste like sweet, delicious baked pudding with slightly caramel and cinnamon flavour.

Preparation time 30 minutes .. Baking 120 minutes

INGREDIENTS .. 6-8 pers

  • 1 liter melk
  • 45 klontjes suiker (240 gram)
  • 2 eieren
  • 400 g dark sugar syrup
  • 1 kl kaneel
  • 1 snuifje foelie
  • 7 mastellen (650 g)

PREPARATION

Boil 1 liter of milk with the sugar lumps. Grate now seven mast up and add them to the milk. Beat two eggs and add there the pinch of mace and cinnamon. Finally add another sugar syrup through it and let it boil. Thereafter, the slurry is poured into the heatproof bowl and two hours baked in the oven at about 170°C. The pies may be out of the oven as soon as one is with a knitting needle stick injuries and without that something will stick.

Typical Belgian Mastellen bread used in this recipe you can substitute with older, white toast bread of the same weight. The cake tastes the best next day, after being cooled for whole night in the refrigerator.
